Creamy Vegan Cashew Sauce over Zoodles Healthy Recipe

This keto diet recipe is two in one. You have to prepare the stunning green sauce first and after that you have to prepare the zoodles. You will also get the recipe for zoodles in the post. Enjoy this yummy healthy recipe. #healthyrecipe #ketodietrecipe

Ingredients

  • ¾ cup raw cashews

  • ½ cup water

  • ¼ cup packed fresh parsley leaves

  • 1 tsp lemon juice

  • 1 TBSP extra-virgin olive oil

  • ½ tsp reduced-sodium tamari

  • ¼ tsp sea salt

  • Zoodles (see ingredients and recipe below this recipe card)

Directions

  • Soak raw cashews in water for at least 3 hours. Drain and rinse.
  • Combine cashews, water, parsley, lemon juice and salt in a blender. Puree, stopping and scraping down the sides as necessary, until smooth.
  • To make ahead: Refrigerate for up to 5 days.
  • Pour over Zoodles!

For the Zoodles:
• 2 large zucchinis, peeled and “zoodles” (You can julienne the zucchinis by hand, but I love using a spiralizer. People who spiralizer a LOT love the Paderno, but I’m happy with the handheld.)

• I like to serve this sauce over raw zoodles because it’s so easy to overcook zoodles and then you have zoggy zoodles! However, if you prefer, you can blanch the zoodles in a small amount of water on top of the stove for 30 seconds or less, to the doneness you prefer. You can also sauté the zoodles in a teaspoon of olive oil for 30 – 40 seconds. Pour warm sauce over cooked or raw noodles and serve!
