Quinoa (pronounced KEEN-wah) has the highest nutritional profile of all grains, and is known as an amazing source of energy. It is as versatile as rice, with a smooth inner coil but slightly crunchy outer texture. Side or main dishes are easy – just add chopped raw or cooked vegetables, serve cold or warm. It also makes a delicious, energizing breakfast porridge with dried fruit, nuts and cinnamon.

Here’s just a short list of what makes quinoa a Superfood:

• Gluten-free; easy to digest

• Ideal for endurance

• Contains all eight amino acids, making it a complete protein (the only grain that is!)

• High in protein – 9 grams per serving

• High in B-6, iron zinc, potassium, calcium

• A good source of a type of vitamin E that is known as an anti-inflammatory

• High in magnesium. Magnesium helps relax blood vessels, which may result in fewer headaches for migraine sufferers and decreased risk of hypertension and stroke. Also strengthens the kidneys, heart, and lungs.

• High percentage of oleic acid, a heart-healthy monounsaturated fat; also contains Omega 3s (contributing further to its anti-inflammatory properties).
