Green Curry Halibut

Ingredients:
• 4 4-oz halibut fillets, rinsed and patted dry
• 1 Tbsp coconut oil
• 1 cup red onion, thinly sliced
• 1 cup carrots, thinly sliced
• 1 Tbsp green curry paste
• 2/3 cup coconut milk
• ¼ cup cilantro leaves, chopped
• Juice of 1 lime

Directions:
Heat coconut oil in a large skillet over medium heat. Add the onion and carrots and cook, stirring occasionally, until the onion is softened, about 4 minutes. Stir in the curry paste and cook for 1 minute. Stir in the coconut milk and bring to a simmer. Move the vegetables to the sides of the pan and place the fish into the pan. Spoon veggies on top of the fish, cover and simmer for 10 minutes, until fish is opaque and flakes with a fork. Squeeze lime juice over fish, garnish with cilantro and serve.
