Every year you either go to the Pumpkin Patch or the Grocery store (which was my case when I was a kid since I grew up in a Los Angeles suburb) thinking about which pumpkin had the perfect side to make your wonderful carving on, never even thinking about what else can you do with that pumpkin or are there any health benefits in Pumpkin?

Well I am here to tell you besides pumpkin pie, pumpkin bread, pumpkin cheesecake, even pumpkin soup it turns out there are a lot of different things you can do with that jack-o-lantern and the health benefits are huge!

• A single cup of pumpkin contains over 200 percent of most people’s recommended daily intake of vitamin A, making it an outstanding option for optical health.

• Pumpkin is packed with nearly 20 percent of the recommended amount of daily vitamin C, which may help you recover from colds faster.

• Pumpkin is rich in fiber, which can help you feel full longer.

• Pumpkin seeds are a good source of protein, minerals, vitamins, and omega-3 fatty acids & are very rich in the amino acid tryptophan so a handful of roasted pumpkin seeds may help you stay happy!

• The fruit (yes pumpkin is a fruit) is a good source of B-complex group of vitamins like folates, niacin, vitamin B-6 (pyridoxine), thiamin and pantothenic acid.

Here is a great recipe for a Pumpkin Pie Smoothie

Ingredients

• 1/3 cup organic canned pureed pumpkin

• 1 cup almond or coconut milk

• 1 tbsp. almond butter

• ½ frozen banana

• 1 pitted date

• 3/4 tsp pumpkin pie spice (or 1/4 tsp ground cinnamon
 and 1/8 tsp nutmeg)

• 1/4 – 1/2 tsp pure vanilla extract

• 1 tbsp. ground flax seeds

• 1 tbsp. chia seeds

• ½ cup ice cubes

• cinnamon stick

Directions

Blend all ingredients until smooth and top with cinnamon. Add a cinnamon stick and enjoy!
